THE NAME
EMPORION is the name of the oldest Greek colony, founded by the Phoenicians. In the current Ampuries remains have been found of the oldest wines in the Iberian Peninsula dating back to VI century BC and from where comes the name EMPORDÀ  that indentifies the region and the 'Denominacion de Origen' (guarantee of origin).
The winged horse, Pegasus, identified EMPORION with the money (dracmas) that was minted in the colony during the Greek period and subsequently by the Romans.
OUTPUT

3.250 bottles of 75 cl and 160 magnums of 150 cl.

PRODUCTION

The different varieties are fermented separately in stainless steel fermentation tanks cooled to a constant temperature of 24ºC. They are stirred twice daily and 30-40 days from the start of fermentation, the juice is separated from the grape residue, depending on the variety.  The length of incubation is determined by tasting. The fermentation malolactic is carried out in the warehouse. It undergoes minimum treatments of clarification and filtration before being bottled.

AGEING

18 months in new casks of Allier French oak of medium/light toasting.

TASTING NOTES Ripe cherry colour. Intense aroma of balsamic and spices, mature fruits of the forest, red softened fruits, integrated well with the oak. In mouth it is tasty, powerful, full, well constructed, elegant and balanced.
GASTRONOMIC NOTES The perfect accompaniment to both red and white meat, gelatinous meat, stews, game, fish, rice, vegetables and salads.
