GRAPE VARIETY

White Garnatxa (63%), White Samsó (37%)

THE NAME
This wine is born of grapes cultivated in the vineyards of Garnacha and Samso, situated in the slate slopes from where it is possible to see the sea and the mountains of the Canigo, snow-covered for a good part of the year. It's name ("Of Snow" in Catalan) and the crystal snow that decorates the label, are inspired by this singular landscape. The colour blue of the name reminds us of the sea and the yellow, the golden reflections of the wine.

PRODUCTION
The grape is carefully selected and hand picked the moment of the grape harvest to obtain the ideal and homogeneous degree of ripeness. The grape juice marinates with the skins of the grape for ten hours at 7ºC and it is later drained by gravity and ferments for 18 days in stainless steel fermentation tanks at a temperature of 13ºC until it obtains an alcohol content of 10% Vol.
The fermentation is completed in new casks of Allier oak of medium/light toasting.
The wine remains in the casks in contact with it lias for six months and before bottling it is filtered and stabilized at a temperature of -3ºC.
TASTING NOTES
Brilliant golden yellow in colour. An intense aroma very expressive ,mineral, hints of mediterranean herbes , with a cream note because of the oak. In the mouth it is round, flavorful, well-adjusted, persistently with variety and mature fruit expression.
GASTRONOMIC NOTES It is a perfect accompaniment for fish and shellfish in sauce, smoked food, charcuterie, fresh and cured cheeses, vegetable dishes and warm salads. It can be a good accompaniment for white meet and rice.
